บ๊วยกวน

บ๊วยกวนโครงการหลวง ทำจากบ๊วยดอง (ซึ่งบ๊วยนี่ก็ปลูกในโครงการหลวงด้วยเหมือนกัน) แล้วแกะเอาเฉพาะเนื้อมากวน ขอย้ำว่าเนื้อล้วน ๆ แล้วปรุงรสให้ออกมาทั้งหวาน เปรี้ยว เผ็ดนิด ๆ

บ๊วย เป็นไม้ผลชนิดหนึ่งที่โครงการหลวงส่งเสริมให้เกษตรกรชาวเขาปลูกกัน แต่เราๆ คงไม่เคยเห็นโครงการหลวงเอามาขายกันให้เห็นจะ ๆ แบบผักนานาชนิด เพราะว่าบ๊วยผลสด เค้าไม่กินกันงัย เคยลองบ้างเหมือนกัน รสชาติฝาด+เปรี้ยว ถึงว่าเค้าไม่กินกัน

บ๊วยส่วนใหญ่ (จริงๆ ทั้งหมด) เอาไว้แปรรูป คือ ดอง แล้วเอาที่ดองแล้วมาทำอาหาร เช่น น้ำบ๊วย ปลานึ่งบ๊วย หรือแม้แต่เอาที่ดองแล้วไปแปรรูปต่อ เช่น ทำบ๊วยกวน บ๊วยแห้ง ๆ ที่กินเวลาเมารถ น้ำจิ้มบ๊วยเจี่ย ฯลฯ

บ๊วยในโครงการการจะเก็บเกี่ยวช่วงเดือนมีนาคม ส่วนที่เหลือจากการขาย โครงการหลวงทำบ๊วยดองเก็บไว้ สนใจลองติดต่อที่ฝ่ายตลาดของโครงการหลวง

Japanese apricot preserve made from the Japanese apricot that grows in royal project area. Japanese apricot, commonly known as ‘Ume’, can’t eat fresh. All of them sale to processing such as pickled in Chinese style or Japanese style. Some of them, Royal project pickle in Chinese style. Flavored with salt, they are yellowish brown in color and quite salty and sour. Japanese apricot preserve made from the Pickled. Royal project sale the both pickled and preserved.

The concept for the Royal Project was born, right there, at Doi Pui, as the King himself describes in a Royal Address in 1970:

‘I asked to Hmong how much a family earned in average from the selling of opium. The answer was 3,000 to 5,000 baht. When asked how much the annual selling of fruits would bring, the reply was that the local variety of peaches would bring 4,000 to 12,000 baht! It was then that we thought we had the answer. We could improve the wild fruits, such as local peaches, by grafting. We could also chose other fruits which are high-priced and in great demand, such as apples, pears and chestnuts. In fact, there are a great number of wild trees and other plants that could be used, including some medicinal herbs. These present no marketing problem. And the hill-tribes will not have to compete with the lowlands as the crops cannot successfully be grown there.’
