Something new in 2007, Red Claw Crayfish …
Red Claw Crayfish, also known as Tropical Blue Crayfish or just Redclaw. Redclaw are freshwater crayfish with a similar appearance to small lobster and very similar to the marron and yabby. Redclaw colour ranges from dark brown to blue-green body and adult males have a distinct red patch on the outer margin of the claws. They are turn orange when cooked. The flesh is virtually fat free and has a clean, sweet and delicate flavour. Redclaw are farmed and reproduced in Thailand at Royal Project. Doi Inthanon. Redclaw are produced without the use of chemicals and growth regulators.
